Healthy Broccoli Soup Recipe

1 large broccoli head or 2 medium sized heads
1 large baking potato cut into small cubes
1 medium sized onion finely chopped
2 garlic cloves finely chopped
5 ½ cups vegetable broth
2 tablespoons extra virgin olive oil
¾ teaspoon thyme
Salt and pepper to taste

I don't peel the potato, but you may prefer to do so. The peel, however, contains vitamins, minerals and fiber. Remove and separate the broccoli florets. Chop the florets and set aside. Finely chop the stems and set aside.

In a stockpot, heat the oil over medium heat. Add the onions and garlic. Cook for about 15 minutes or until the onion is tender. Add the broccoli stems, potato, broth, thyme, salt and pepper and bring to boil over high heat. Reduce the heat, cover and simmer for 25 minutes or until broccoli stems are tender.

Puree the cooked mixture in a food processor in batches and return to pot.

Mix in the broccoli florets to the puree and bring to a brisk simmer over high heat. Reduce the heat and simmer gently, cover and cook for 10 minutes or until the florets are tender. Serve hot.

Makes about 4 servings.

An option is to add 2 medium sized, chopped parsnips when cooking the stem and potato mixture.

Try a sunflower seed or peanut garnish when serving this healthy broccoli soup recipe.

Broccoli is high in fiber, vitamins C, K, A and folate. Studies have suggested that diets high in broccoli help prevent breast and prostate cancers, and are a good source of antioxidants. Broccoli has also been linked with preventing stomach and colon cancers and heart disease.
